How a simple question sparked a culinary movement in Poblacion

Lighting the Way

In 2017, when a foreign chef visited Manila, Alphonse Sotero and RJ Ramos found themselves asking a simple question: "Where can we take him to experience truly great Filipino food?" After sampling the usual restaurants, they realized there was room for another player — one that could push the envelope further.

After almost two years of planning, a challenging business pitch, and six partners later, Lampara opened its doors in December 2018 on the second floor of an apartment building on Enriquez Street in Poblacion.

The Philosophy

"We're not here to compete with your lola or your mom. We know they make the best Filipino food. We're here because we want to push the envelope further."

Chef RJ chose the name "Lampara" — Spanish for lamp — because he was fascinated by fire. It also symbolizes how the team aims to light the way in Filipino cuisine, illuminating traditional flavors through modern techniques and creative presentation.

The ingredient-led approach showcases classic French techniques infused with Filipino touches, resulting in dishes that are approachable yet inventive, familiar yet surprising.

The Space

Artsy yet effortlessly cool, Lampara's interiors are far from typical fine dining. Eclectic pieces and mismatched furniture create a warm, inviting atmosphere complemented by hanging lamps that define the space.

The main dining area fronts the kitchen, while a terrace offers open-air seating on warm evenings. The lights dim at 9 PM, transforming the bistro into an intimate setting perfect for nightcaps and quiet conversations.
